Make traditional Curaçao Salt Cod Stew with salted cod, onion, green pepper, tomato and celery. Serve this flavorful Caribbean dish with funchi or Tutu.

Ingredients
  • 1 pack of salted cod fish
  • 1 onion
  • 2 green pepper
  • 2 tomatoe
  • 1 piece of celery cut in pieces
  • 2 cloves of garlic
  • 1 table spoon of butter
  • 2 table spoon of oil

Preparation


  1. Put the salted cod fish in water and let it sit overnight. Make sure the fish is completely covered in water.
  2. Next day, remove the fish from the water, and rinse them thoroughly and remove scale if any.
  3. Put the fish to boil with the garlic until the fish becomes tender.
  4. Drain the fish and rinse the fish some more to remove as much salt as you can.
  5. Cut the fish in smaller pieces, rinse it with water again.
  6. After drying this fish with paper towel, add the oil into a frying pan and  fry the on medium high heat.
  7. In a seperate pan, put the butter with a table spoon with water and when the butter is melted and hot, add the diced onion, diced green pepper, tomatoe, and celery.
  8. Add the fish into the pan with the onions and other ingredients and let it cook for a couple of minutes. Add more water if necesarry until all ingredients are fully cooked.
  9. Stew can be served with mashed pumpkin, tutu, and funchi.
