Beef Stew, known as Karni Stobá in Papiamentu, slowly simmers tender beef with tomatoes, onions, peppers, carrots, and island seasonings. The result is a rich, comforting Curaçao dish for a satisfying family meal.

Ingredients
- 1 1/2 lb of beef
- 1 lemon
- 2-3 tablespoons oil
- 1 chopped onion
- 1 chopped bell pepper
- 1 chopped tomato
- 2 cloves of minced garlic
- 1 small meat stock cube
- pepper to taste
- 1/2 teaspoon curry powder
- 1/2 teaspoon ground cumin
- 1 tea-spoon mango chutney
- 1 tablespoon soy sauce asin
- 1 tablespoon pickles
- 2 teaspoons tomato puree
- about 2 1/2 cups of water

Preparation
- Wash the meat in water with lemon juice and cut the beef into small cubes or strips.
- Put the meat in a pan.
- Add the remaining ingredients except the tomato paste and water.
- Mix well and let it cook a few minutes on medium heat.
- Then add the tomato paste and water.
- Stir well and bring to a boil.
- Cover pot with a lit and let is heat simmer on low heat until the meat is tender and the sauce is nice and thick.
- Every now and then stir well.
