    The goat stew recipes is a popular stew on the islands of Curacao, Aruba, and Bonaire.


    Ingredients

    • 2 lbs of goat meat
    • 3 big limes
    • salt to taste
    • 1 tablespoon of vinegar
    • 2 cooking spoon of butter
    • 1 onion
    • 1 tomatoe
    • 1 teaspoon of garlic powder
    • 1 teaspoon of nutmeg
    • 2 cubes of stew bouillons
    • 1 cooking spoon of tomatoe paste
    • 1 cooking spoon of soy sauce
    • 1 table spoon of annato powder or ground annato
    •  


    Preparation

    1. Cut the goat meat into smaller pieces and remove all the fat.
    2. Rinse the meat well and put them into a bowl of lime juice, salt, and vinegar. Let it sit for about 30 minutes
    3. Take the meat out of the water mixture, and rinse well.
    4. Put the butter into a pot on medium heat and let it melt. Then add the goat meat in the pot.
    5. Stir the meat in the pot and make sure all sites of the goat is seared and then add then diced onion, tomatoe, garlic, nutmeg, tomatoe paste, soya saus, and let it cook for about 3 minutes.
    6. In the meantime, put some water to boil and then add the water to the pot with all the meat and ingredients. Water needs to be about 3 inches on top of the meat in the pot.
    7. Add the bouillons and stir everything in the pot and let it cook until the meat becomes tender.
    8. The stew can be served with rice, tutu, or funchi.
