Peanut Candy, known in Curaçao as Panseiku, combines roasted peanuts with caramelized sugar to make a crunchy island sweet. It is a familiar treat at snack bars, markets, and street stalls across the Dutch Caribbean.

Ingredients
- 1 kg /2.2 lbs of whole peanuts
- 1 lb brown sugar
- 1 piece of Piloncillo / Brown Sugar Cone (Klenku)
- 2 cups of water

Preparation
- Turn on the oven to 350F
- Take the peanuts out of its shell and put them on a baking pan
- Put the pan into the oven until the peanuts turns light brown
- Take the pan out of the oven, seperate the peanuts fron eachother and let them cool down
- Mix the sugars in the water in a pot on the stove on medium/high heat.
- When water starts to crystalize , pour the peanuts into the water mix while stirring it.
- Let it cook until the mixture is think
- Lower the heat and scoop out the mixture using a large spoon and put them on a baking sheet on baking paper or aluminum foil.
- With each scoop you make on candy flat on the pan.
- Turn off the heat and let the candy cool of and its ready to eat.
Water Crystalization :
- To know if water started to crystalize, you can use a spoon and takesome of the sugar water and drip it into a water cup. If the water takes a little bit to drop from the spoon and took a little bit to desolve in the cup, mean the water started to crystalize and is ready to pour the peanut.
