Preparation

  1. Soak the salt cod overnight in enough water to completely cover it.
  2. The next morning, when ready to cook, rinse the salt cod thoroughly, remove any scales, and boil it with the garlic.
  3. Once the salt cod is tender, drain the water and rinse the fish two or three times to remove the excess salt.
  4. Cut the salt cod into small pieces, rinse it once more, and lightly fry it in a small amount of oil.
  5. In a separate pan, add the onion, bell peppers, tomatoes, and celery. Sauté them with the butter and add one tablespoon of water.
  6. The water helps prevent the vegetables and seasonings from becoming too dry while cooking.
  7. Add the salt cod to the vegetables and cook everything together for a few minutes, allowing the flavors to combine.
  8. Serve the fried salt cod with boiled pumpkin, tutú, or funchi.
  9. It can also be served with bread, which pairs very well with the salt cod.
