- Soak the salt cod overnight in enough water to completely cover it.
- The next morning, when ready to cook, rinse the salt cod thoroughly, remove any scales, and boil it with the garlic.
- Once the salt cod is tender, drain the water and rinse the fish two or three times to remove the excess salt.
- Cut the salt cod into small pieces, rinse it once more, and lightly fry it in a small amount of oil.
- In a separate pan, add the onion, bell peppers, tomatoes, and celery. Sauté them with the butter and add one tablespoon of water.
- The water helps prevent the vegetables and seasonings from becoming too dry while cooking.
- Add the salt cod to the vegetables and cook everything together for a few minutes, allowing the flavors to combine.
