    This Version of Liver Stew Recipe, is very popular on the island of Curacao and its neighboring islands. It can be done with beef or goar liver. Enjoy!


    Ingredients

    • 1 lbs of beef or goat liver
    • 1 large tomatoe (diced)
    • 1 large onion (diced)
    • 2 cloves of garlic (minced)
    • 2 table spoon of butter
    • 1 lime
    • 1 teaspoon of nutmeg
    • 1 teaspoon of cumin
    • Salt and Soya saus to taste
    • 16 oz of water
    • 1 teaspoon of Annato powder


    Preparation

    1. Wash the liver well
    2. remove all the membrane and cut it in smaller pieces
    3. put the pieces in a bowl in milk, vinegar, or lime juice and let it sit for about 2 hours
    4. Boil the liver for about 30 minutes. After done boiling, let the liver cool of and then diced them up.
    5. In a different bowl on medium high heat, add the butter, onion,tomatoe,garlic, nutmeg,cumin, salt and soy saus and let it cook .
    6. Then add the water and let it cook until the content start to thickens into a saus.
    7. Then add the diced liver and the anneto into the saus and let it cook until the liver becomes tender.
    8. The stew can be served with rice or funchi
